Dandelions fill me with wonder!
While harvesting and cleaning some young plants yesterday (to eat stir-fried with morels, squash, and prosciutto), I noticed the center of each tiny plant contained one large bud with quite a few tiny buds forming around it waiting for their turn to develop. I never knew this before. How interesting!
When is the last time you marveled at something most deem ordinary?
Try being a child today and really look at a dandelion. Put all judging aside and just go take a long look at a simple dandelion. Marvel over its tenacity, beauty, and yes, deliciousness.
1. A drink from roasted dandelion roots was invented in 19th century England and is still trendy today.
2. A cup of chopped raw dandelion greens provides 112 percent of the daily requirement for vitamin A (at only 25 calories).
3. From blossom to root, 100 percent of this weed, which is also an herb, is edible for most people.
4. Dandelion flowers reach heights of 6 to 24 inches, and roots go as deep as 10 to 15 feet.
5. Dandelions are part of the daisy family, one of the biggest in botany with more than 1,620 genera of plant types.
6. A single dandelion head consists of up to 300 ray flowers that look like tiny petals at first glance.
Go ahead, put down the weed killer and marvel. The earth will thank you in golden dandelion sunshine!
